If you are talking about what will fit in between the stock swingarm then a 180 is as big as ya wanna go.

I recall seeing on Barry's UK site where someone fitted a 190. He had to use counter sunk bolts on the sprocket to get the sprocket as close to the swing arm as possible allowing the chain to clear the tire.

Depends on the tire.  Different makers will have a different actual width between tires that are nominally the same size.  Also depends on the rim and thus the shape of the tire when mounted.
