Polishing Carbs

So I pulled the carbs off my bike over the weekend (pictures to follow in a different post), and the tops of them (vacuum chamber caps) are all grungy. What are these made of? Can I polish them without them immediately developing large amounts of rust? Is it bad to polish off the gold-ish coating?

Steel and nope. Unless after you polish you have them clear coated.

Thanks for the info... Maybe I'll paint them... Maybe I'll just accept their ugliness and work on "more visible" parts of the bike.
