Was wondering what to set the choke needle to... The needle that is on top of every carb body right next to the top cover....

That's the air idle screw and settings depends on your pilot jet sizes...
For stock 37.5 pilots, set the screws 3 turns out from fully seated. That will get you started.
Final adjustment should be done with the throttle 'blip test' on a warm engine.

Not the screw that sits between the carbs for syncing them together... Carbs are stock as far as I know... I'll upload a photo when I get home as to what needle in talkin about...

this is what I was talking about.... I was wondering what it is used for... and what would happen if it was all the way screwed in allowing no air flow through it... I have it 2 1/2 full turns out from fully seated... not sure if it is far enough out.....

Small picture but it appears to be your fuel air screws. Basic setting is 2 1/2 to 3 turns out.  From there best to do a blip test and sync the carbs.
When the screw go's in it will lean out your bike and when you screw out it enriches the mixture.  It has a lot of effect from 0 to 1/4 throttle.
As a note when you are just cruising down the road at 70 mph you are probably only at 1/4 throttle.

Dunno if you couldn't understand him, but it doesn't get any more clear than that.  3 turns out from gently bottomed is the starting point, each cylinder will likely have a slightly different sweet spot.  If you're out to 5 turns and not getting improvements, you'll need to change the pilot jets (assuming the carbs are clean internally).

Maybe a little more clarification if you've never worked on carbs before.
Take a screwdriver and gently turn them clockwise until you feel them hit bottom. Stop when you feel that so you don't damage the screws.
Then turn each screw counterclockwise 3 complete turns out and see how it runs.
