This is a pretty good animated video of how a CV carb works.

It is a Harley carb, but it still is a good video

Only difference here, as I can see, is the fuel mixture screw which doesn't have the same role in FJs?

With all due respect I disagree. It has the exact same effect on the FJ. Since both have the mixture screw, on the engine side of the side, opening that screw increases the fuel flow and richens the mixture. If the screw were on the air cleaner side, of the carb slide, it would adjust how much air is allowed to flow. So just the opposite effect and leans the mixture if opened.
Don't fix it until it's broke!

The only difference that I see with the air fuel mixture screw is the location. Ours is 180 degrees to the top.

By design I'm sure. Our inline 4's have open access from the top side. The Harley has the open access from the bottom.
Don't fix it until it's broke!

According to files that I read here, mixture screw on the FJs only adjusts the amount of pre-mixed air/fuel that enters the engine (pilot and air bleed jets being responsible for the mixture itself i.e. for the air to fuel ratio). It doesn't shut of the fuel flow in the pilot circuit like here on the video. Or maybe I understood it wrong. Not that it matters much.
