Rear brake locks up too easy

After getting my 93 on the road a few months ago with a new aftermarket rear brake rotor, pads and seals it has a tendency to lock up with very little pedal pressure. I dont use the rear brake often, mainly as a stabilizer at low speed and trail braking into corners but this morning I had to brake hard to avoid a car and it locked way too easily. I let it off and reapplied and it locked again. Is this a common fault and what is the solution.
I miss my Moto Guzzi linked brembos, heaps of power and feel - touch the rear brake and the bike squats down into the road no lockups, no dramas

IMO FJ rear brakes are way too efficient. There is only so much rear brake you can use. I can't recall riding anything with a brake that touchy. Like anything different, you will get used to it, but if the bike is relatively new to you, I can understand your query.
I don't believe this would be anything to do with the disc and pads being aftermarket.
Look at any modern, fast, heavy big bike and the disc is nowhere near the size of the FJ.  I have an FZR 600 rear and I much prefer the feel. I also have a standard one which requires caution when I first get on it if I haven't ridden it for a while.
You will get used to the light touch required.

I left some air in the brake lines, I can still lock them up but I have to really want it to lock up...
The glass is not half full, it was engineered with a 2X safety factor.

You replaced all the parts and it works too well now?  Wait, what?

Cut the rotor down or put oversized slots in it.  Lower or shorten the brake lever.  Drill/machine the pads to reduce their contact area.  Limit the travel of the pedal.  Lotsa ways to reduce the power of a braking system, though it's sure handy to have with a passenger.

Of course, all that assumes that the suspension is working appropriately first.

I actually just recently tightened up the feel on my rear brake (using the threaded rod attached to the rear lever) and love the added power I now get from it!
It's not to the point of locking up too easy, it's just much more effective now.
I like it.
It will now pull the back of the bike down under heavy braking.
I'm using the Galfer rear rotor and pads that came with the rotor from Galfer.
