Well after putting everything in place it looks like 2mm each side is the size of the mismatch.
The front wheel is a 95 fzr1000 with std oem fj discs and the calipers are gold spot r1 5pw on std r1 forks.

That doesn't track. Standard oem FJ disks are 300mm diameter. You need 320mm diameter disks on your R-1 forks.

Regardless...Plenty of '95 FZR rims out there, so shave the FZR rim to get the offset you need

Fit a ThunderAce front rim and brake rotors.  Only front rim made by Yamaha with the "new" rotors on a rim that a.so has a speedometer drive.  Perfect for early R1 fork swap.  Should be MUCH EASIER for you to find one in UK - it was a one year only model in the US.

Can't find any pictures when I completed the swap - all the pictures I have now are later after I swapped the Performance Machine Chicane rims and brakes.

Ok...some good progress this weekend with the front starting to come together.
The thunderace and 5pw R1 share 298mm disks ...the thunderace has the mechanical speedo drive and now i have a solution.
The spacing of discs with the calipers is perfect...just need to make the speedo drive a bit thinner on The lhs facing forward. Taken a few mm off on the speedo drive outer facing and some 5.35mm off the inside of the left fork leg.
I'll measure up the speedo drive for material removed in case anyone else goes this route.
Stainless lines
Blue spot calipers but std m/cyl (so far)
Ebc prolite front discs
Ohlins remote adj rear shock
Remus 4:1
Still running original chain and sprockets from new (scotoilers really work)

Excellent!  Very similar to using the ThunderAce rim, brakes, and speedo drive on early R1 forks.

It would have worked very neatly if id used thunderace forks....but R1 fork bottoms are set up for no analogue speedo drive so the left hand fork leg needs a little material removed to allow everything to fit and the discs to remain properly centred.
That job is now done ...next is to sort of the rear swing arm/r1 rear wheel, sort the chain run and tidy up the engine.
