Sometimes there is even a limit to the correct screw driver. The vise grips are a good idea but sometimes difficult to get purchase on domed screw heads. The screws are soft and the grips can also be used to create "flats" either side of the screw head. At this point you could rotate the bike with grip you now have on the screw. This method also preserves the screw driver slots if not replacing them with allen heads.

and if there's room, I'm not above hacksawing a flat tip groove into a stripped top. There is always a way...
