Disclaimer. This is only a suggestion, you attempt this at your own peril, I am not responsible if you chop off parts of your frame, swingarm, fingers or bit off the wifes dog.

Remove belly pan>Exhaust>Cup of tea and a fag.

Remove the nut from the front bolt and slide it out until it comes into contact with the footrest plate, rotate until the flat lines up with the lower edge of the plate and mark where you need to remove material.

Another fag.

(Bet the Americans are loving this)

I used a flap wheel on a 4 inch grinder to remove material from the back of the plate, there's a fair bit of space behind it but keep an eye on the frame, working my way along and towards the outside of the plate.

I ended up with about a 45 degree angle from the outside towards the back, swapped to the cutting disc and trimmed off that piece of alloy (I think you would cut to deep into the plate if you tried to remove all of it with the flap wheel)

Swap back to the flap wheel, check where the head of the bolt hits the plate and gently remove just enough material to allow the bolt to come out.

You could clean up the front of the plate with a file although tbh its hardy noticeable (but you can see it)

Of course you could always take off the wheel, swingarm etc etc but it seemed a lot of work to remove one bolt.
